Cauliflower Puree

I have had a ton of requests for my recipe for cauliflower puree on Twitter and Instagram, so here you go!  I think you will be surprised at how easy this is to make and how delicious it is.

The recipe contains 6 ingredients: cauliflower, almond milk, chicken broth, butter, salt  and pepper.  That’s it!

I use almond milk because that’s what I have in the house and I like the flavor.  You can certainly use any other liquid you have on hand (milk, soy milk, etc…) or stick with just chicken broth for a lighter puree.  You can also omit the butter, but I think that it adds an extra creaminess to the puree that makes it more like mashed potatoes.

This is my go-to side dish lately and it’s the perfect pairing for any protein!  My favorites are a nice grilled steak or some seared scallops!

Ingredients
  1. 1 head of cauliflower (4 cups)
  2. 3/4 cup unsweetened almond milk
  3. 1/2 cup chicken broth
  4. 2 Tbsp grass-fed butter
  5. Salt & pepper
Instructions
  1. 1. Add about 1 inch water to a pot large enough to hold a metal steamer and bring to a boil.
  2. 2. Cut cauliflower into florets.
  3. 3. Add cauliflower florets to the steamer, cover pots and reduce heat to a medium-low. Steam for 20 - 25 minutes.
  4. 4. Once cauliflower is fork tender, transfer to a food processor.
  5. 5. Add almond milk and broth to food processor and pulse until smooth.
  6. 6. Add butter to mixture and pulse until creamy.
  7. 7. Season with salt & pepper to taste.
  8. 8. EAT!
Notes
  1. The amount of liquid will vary depending on how much cauliflower you use. Start will less and add as needed until the mixture gets to a smooth consistency.

Feasting Poolside

Ahhhh holiday weekends.  These are the times to eat too much, drink too much and relax!

Well that’s pretty much what my day consisted of yesterday. ¬†B and I came down to NJ to visit my Dad and Stepmom and basically do a whole lot of nothing. ¬†B’s parents, my uncle and two of my cousins also joined us to partake in the relaxation. ¬†It was 95 degrees out so when we weren’t eating, we spent our time in pool cooling off and enjoying some refreshing beverages!

While this was fun, my favorite time is always meal time ūüôā ¬†I made a lot of the sides with my Stepmom while B and my Dad manned the grill. ¬†We definitely got the better side of the deal because we were in the air conditioning. ¬†B’s Mom set up the tables in a wonderfully shady spot and we were good to go.

So here’s what we gorged ourselves dined on!

B’s family is from Albania and his mom makes some delicious Mediterranean dishes! ¬†She brought a cheese pie and a spinach pie. ¬†Sadly since I found out about my egg sensitivity, I haven’t been able to eat either of these, but everyone else enjoyed them.

They also brought B’s favorite feta cheese from a Greek specialty store, Titan Foods, in Astoria. ¬†It’s a sad day in our house when it runs out, so I put a bunch out for him along with some Wave Hill Bread we brought from home.

For sides, we grilled up some eggplant, onions and peppers.  I also roasted some local CT asparagus and tossed it with a lemon vinaigrette.  My stepmom had roasted some beets from her garden the night before, so I tossed those with some feta and parsley, and also made a Greek salad with tomatoes, cucumbers, peppers and feta.

And finally the proteins…burgers, dogs and shrimp all cooked perfectly on the grill. ¬†Simple and delicious!

After lunch/dinner/our only meal of the day, it was back in the pool along with a lot of lying around to digest before diving into the decadent desserts B’s mom brought. ¬†Baklava, galaktoboureko and¬†kataifi…whoa! ¬†I can usually only have one bite of these because they are SO sweet, but they are still delicious ūüôā

What a great day…just what I needed. ¬†Quality time with family, floating around in a pool and stuffing my face. ¬†In the craziness of our everyday life, it’s important to remember to take some time for ourselves and spend it with the people who matter. ¬†Enjoy the beauty that surrounds us and fill your belly with good food.

Introducing RAD Living!

Thanks for stopping by!  RAD Living was born out of my love for life and my desire to share what it has to offer with the world.  There are some pretty amazing things out there, but I never realized it until I actually started opening my eyes to it all.

You may know me from Running at Disney, which I started in January 2012 as I was training for my first half marathon.  runDisney was the catalyst that sent me on my current journey of living a balanced, healthy life and gave me the courage to put myself out there.  I have had so many amazing opportunities, met a ton of inspiring people and have since run 5 half marathons and 1 full marathon.  All things that I never thought I would do.  But there is so much more to me and my life than simply running and Disney.

My newest love is CrossFit. ¬†I started almost a year ago as a way to improve my running, but I have found a passion for the sport that was surprising to me. ¬†I had always hated weightlifting and toning exercises because I found them so¬†repetitive¬†and boring. ¬†Well CrossFit is just the opposite and it is extremely rewarding…who knew I could lift over 200 pounds?!? ¬†I want to share more about my experience in this crazy and exciting sport!
